Summertime Grilling
There are shortcuts that we recommend
to make your backyard entertaining as hassle-free as possible. Use the
following tips to get the best results from your grill.
- Plan as many dishes as possible
ahead of time. Chilled fruits, pasta or salad for example. Marinate your
meats ahead of time, and prepare all of your sauces earlier in the day.
- Try doing your cooking indirectly.
Your food will have to be turned less frequently and you'll have fewer
flare-ups. This will give your more time to mingle with your guests.
- Grill poultry and meats with the
skin or fat on and trim it after its cooked to keep it moist while
cooking.
- If you're grilling a roast, choose
a boneless cut for easier, faster carving. Let one of your guests have the
honor of carving, while you arrange and garnish the serving platter.
- Refer to the
Steak Cooking Chart for optimum
cooking times for juicier steaks.
- For a tasty addition to your meal
wrap an herb-buttered loaf of bread in foil and heat it on the grill.
- Heat vegetable casseroles, baked
beans or macaroni and cheese on the grill using the indirect heating
method. Use disposable foil pans for easier cleanup.
- Precook baked potatoes in a
microwave oven. To make the skin crispy for serving place them on the
grill next to the entrée.
- After a grilled meal offer cool
deserts like a sorbet or chilled fruit.

Creamy Salsa Dip |

For a quick dip, stir together ½ cup of plain yogurt, ½ salsa, and ½ cup
of mayonnaise or salad dressing. Cover and chill until serving time.
Garnish with finely chopped jalapeño pepper if desired. Makes about 1¼
cups. |
