Cajun Style Pork Chops

It's a fact that Cajuns like their food on the spicy side. Often they'll use several kinds of ground pepper, such as ground white, red, and black pepper rubbed onto these chops.

PREPARATION TIME: 25 minutes - GRILLING TIME: 25 minutes

1 teaspoon onion powder

¼ to ½ teaspoon ground white pepper

¼ to ½ teaspoon ground red pepper

¼ to ½ teaspoon ground black pepper

4 pork rib or loin chops, cut 1¼ inches thick (about 2¼ pounds total)

  • Combine onion powder, white pepper, black pepper, and ¼ teaspoon salt in a small bowl. Trim fat from pork chops. Rub both sides of the chops with the pepper mixture.
  • Grill chops on the rack of an uncovered grill directly over medium coals for 25 to 35 minutes or until no pink remains and juices run clear. Turn once. Makes 4 servings.
