Grilled Caribbean Chicken Breast

Prep time: 10 minutes Marinade time 2 hours

  • ¼ cup fresh squeezed orange juice

  • 1 teaspoon orange peel

  • 1 tablespoon olive oil

  • 1 tablespoon lime juice

  • 1 teaspoon minced ginger

  • 2 garlic cloves, minced

  •  ¼ teaspoon hot pepper sauce

  •  ½ teaspoon minced fresh oregano

  • 1 ½ lb. boneless skinless chicken breast

  1. Cut each breast  in half

  2. To make the marinade, combine first eight ingredients. Pour marinade over the chicken breast and refrigerate at least 2 hours or up to 24 hours.

  3. Grill the marinated chicken for about 6 minutes on each side until no lower pink inside.
